The essential difference between our Hog Roasts and Spit Roasts is that the former is cooked inside a large roasting tray and the latter on a spit. Both use the same oven and similar pigs; although we are able to cook slightly larger pigs in the roasting tray and cater for a greater number of people.
Using the spit roasting technique is moderately quicker and has the advantage of a slightly greater yield of crackling. It is arguably more visually engaging than just cooking a pig in a tray.
Cooking times vary depending on the size of pig but typically 5 to 6 hours for a 45 to 50 kg pig. We can source either a Landrace cross breed of pig from our local village butcher or a Rare Breed free range pig from a farmer near Thirsk (at an extra cost).
An approximate guide for catering would be :-
Formal dinner:- 80 - 120 servings per pig
Bread buns:- 130 - 170 servings per pig
We can either cook the pig at your event which then provides the other benefits of a visual attraction (many people find it interesting to see the pig cook) and a wonderful aroma to wet the appetite! Or we can bring a cooked pig to your event providing you are within approximately 45 minutes driving distance from Askrigg (postcode: DL8 3DX), this option is cheaper.
We will provide 4" bread buns, home made apple sauce and stuffing, napkins and/or paper plates along with staff to cook and serve the pork. After we finish serving we will remove all our waste including bones, fat etc.
